From one griddle to all of Europe

Ermelo, since 2012

Osman Avcı started at home in 2012, when he noticed how much demand there was for real regional yufka. One at a time, by hand, on a saç. His mother — an Anatolian woman — knew the formula for that regional taste and supervised the baking.

In the early days twelve people made no more than a thousand yufka a day. Festivals carried the name beyond the Dutch border. When chains like Çiğköftem, Tatlıses, İstanbul çiğköfte and Öz çiğköfte started asking for Ensar Yufka, production had to keep up.

Today the company bakes a hundred thousand a day, in Ermelo, with eighteen people. The machines are new, the recipe is not.

What is in it

Four ingredients, nothing else

No preservatives, no colourings, no egg or milk. That is why our yufka is vegan by default, and why it has to be delivered fresh rather than sit on a shelf for months.

Nine classics

Yufka is not a single-use product. These are the dishes our customers buy it for most, from home kitchens to grill houses.

    Dürüm

    Lavaş around meat, vegetables and sauce. The dish most of our production goes into.

  2. 02

    Su böreği

    Layer upon layer of böreklik yufka with feta and parsley, briefly boiled and then baked.

  3. 03

    Sigara böreği

    Thin rolls with feta, fried or baked. A classic with tea.

  4. 04

    Gözleme

    Folded on the griddle, with spinach, potato or minced meat.

  5. 05

    Çiğköfte rolls

    Köy yufkası with lettuce, pomegranate molasses and çiğköfte.

    Tantuni

    Finely cut meat from the pan, rolled in lavaş.

    A long filled roll, sliced after baking.
